Some fruits hold up better than others in this fruit pizza recipe. Avoid fruits that will turn brown when left out in the air, like apples and bananas. Everything else is fair game on fruit cookie pizza. Choose a variety of fruits that are different colors for the most visual appeal. You can create a fruit rainbow using your favorite fruits!

To make this sugar cookie pizza, you’ll want to collect the following ingredients:

  • Unsalted Butter. Our giant cookie dough base starts with butter. I like to use unsalted butter when baking so that I can control the amount of salt in the recipe.Make sure that it’s at room temperature too.
  • Granulated Sugar. Cream the butter and sugar together to start to make the base of our sugar cookie dough.
  • Egg. This is another must have cookie ingredient. One large egg goes into this recipe.
  • Pure Vanilla Extract. Vanilla is the flavor star here. I always suggest using the best quality pure vanilla extract that you can reasonably afford.
  • All-Purpose Flour. A bit less than two cups of flour is needed here. We want the cookie to be soft and chewy, not dry.
  • Baking Powder. Baking powder gives rise to baked goods like cookies so that they don’t fall flat.
  • Salt. Remember how we used unsalted butter? We will add in the perfect amount of salt to balance the sweetness of the dough.

  • Cream Cheese. Cream cheese is the base to our fruit pizza “sauce”. Regular full-fat cream cheese tastes great, but you can use a lower-fat version if you prefer.
  • Powdered Sugar. Powdered sugar and more vanilla extract are whipped with cream cheese to create the perfect sweet frosting.
  • Fresh Fruit. Use whatever fruit you like to decorate the top of your fruit pizza.

How To Make a Fruit Pizza

A delicious, sweet cookie pizza is really as simple as baking a large cookie and then topping it with cream cheese frosting and fruit. Here are the steps you’ll take to create your masterpiece.

  1. Preheat the oven and prepare a pizza pan by lining it with parchment paper.
  2. In a bowl, cream together the sugar and the butter until it’s combined and creamy. Then mix in the egg and vanilla extract. This is simple enough to do with a hand mixer, but a stand mixer will do the job too.
  3. Add in the flour, baking powder, and salt and mix on slow speed until just combined.
  4. Grease your hands with cooking spray and then spread the dough on the pizza pan in an even layer. Use your hands to shape and press the dough into a circular shape.
  5. Bake in the oven as directed in the recipe. The cookie base does not have to brown. It might look undercooked that that’s ok. We don’t want to dry it out.
  6. Remove from the oven and let cool completely on a cooling rack.

To make the cream cheese frosting, and decorate the fruit pizza:

  1. To make the cream cheese frosting, whip the cream cheesewith powdered sugar and vanilla extract. Add the powdered sugar in batches to avoid a sugar storm.
  2. Once the cookie base has cooled completely, spread the frosting over the cookie dough base using a spatula. Decorate with fresh fruit to create a pattern. Drizzle with honey if desired.

Tips For Making Fruit Pizza

  • You can use store-bought refrigerated sugar cookie dough to make this recipe if you like. Just spread the dough out on the pan as described.
  • Use fresh fruit that doesn’t brown quickly. Avoid apples and bananas, and use berries, grapes, mangoes, pineapple, kiwi, and clementines.
  • If you don’t have a round pizza pan, you can make this on a jelly roll pan or a 9×13-inch cookie sheet.
  • You can use a pizza pan with or without holes, just be sure to line whatever pan you use with parchment paper.
  • For a richer, thicker frosting, double the amount of cream cheese and powdered sugar.

I don’t always find it necessary to glaze the pizza with anything, it’s sweet enough on its own. However, if you want to give your fruit an extra bit of sheen, adding a glaze is a good idea. Drizzling with honey is my favorite way to glaze a fruit pizza. You can also try apricot jam, slightly warmed and diluted with a bit of water then lightly brushed over the top.

Can I Make Fruit Pizza Ahead of Time?

Once the fruit is on the pizza, it’s time to serve it. If you want to prepare this dessert ahead of time, make the crust and top with the frosting. Store in the fridge until you are ready to serve. Add your fruit at the last minute and you’ll be ready to go.

Ingredients

For the sugar cookie base:

  • ¾ cup (170g) unsalted butter at room temperature
  • cups granulated sugar
  • 1 egg
  • 1 teaspoon pure vanilla extract
  • cups all purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • fresh fruit for topping

Frosting:

  • 1 8-oz package cream cheese softened
  • ½ cup powdered sugar
  • 1 teaspoon pure vanilla extract

Equipment

  • 12-inch pizza pan

Instructions

  • Preheat the oven to 390°F/200°C degrees.

  • In a bowl, using a hand mixer cream together the sugar and the butter until it’s well combined and creamy (about 1 minute). Mix in the egg and the vanilla extract.

  • Add the flour along with the baking powder and salt, and beat with the mixer on slow speed until just combined.

  • Line a 12-inch pizza pan with parchment paper, grease your hands with cooking spray then spread the dough in the pan in an even layer. You will have to use your hands to press down the dough.

  • Bake in the oven for 13-15 minutes. The cookie base does not have to brown, it might look undercooked but that’s totally fine as baking it for longer will dry it out. Remove from the oven, and cool completely on a cooling rack.

  • To make the cream cheese frosting, whip the cream cheese with the powdered sugar and vanilla extract. Add the powdered sugar in batches to avoid getting a sugar storm.

  • Once the cookie base has cooled completely, using a spatula spread the cream cheese frosting over the cookie dough base, and then decorate with fresh fruit creating a pattern. Drizzle/brush the fruit with honey if desired.

Notes:

  • If you don’t have a pizza pan, you can make this in a 9×13-inch cookie sheet or a jelly roll pan.
  • Pizza pans with holes or without holes work here as long as you line them with parchment paper.
  • You can use store-bought cookie dough.
  • If the cookie dough is too soft/warm and difficult to work with, chill it in the fridge for 15 minutes.
