"Based on a recipe from Jennifer Cornbleet's book, Raw Food Made Easy for 1 or 2 People. She says in its introduction, "Freeze your extra bananas so you will always have some on hand for quick shakes." Unfortunately for me, I froze my bananas before reading her recipe! I will update after I discover how truly difficult it is to peel a frozen banana! UPDATE: it's truly difficult! :( I will definitely go with this recipe the next time! :)"

Funny...I never thought to do it any other way. Another helpful hint. I like to freeze mine in the qty that I need them in a recipe. I have a banana bread recipe that takes 4 medium bananas so I freeze either 2 per or 4 per bag.

I LOVE this trick! It IS hard to peel a frozen banana, but I hate for them to go to waste, and I LOVE having nice, frosty smoothies without diluting them with too much ice. Thanks for posting! Made for Veg*an Swap, September 2010

FAQs

Should frozen bananas be thawed before baking? ›

Not only do frozen bananas work for baking, but they arguably work better for baking than fresh bananas. Not only does the freezing process not affect the taste or the nutritional value of the bananas, but defrosting bananas makes them softer and therefore easier to mix into batter.

What is the best and easiest way to freeze bananas? ›

Remove the peels and cut them into coins or chunks. Arrange the banana pieces, uncovered, on a parchment-lined baking sheet in a single, even layer. (You can also line the sheet with a silicone mat.) Put the baking sheet on a level surface in the freezer until they're frozen, about three to four hours.

How do you use whole frozen bananas? ›

If you have leftover bananas, you can freeze them in a tupperware container or freezer bags to use at a later time. Then to use whole frozen bananas, let them thaw at room temperature or place them in a bowl of warm water until they are soft enough to mash with a potato masher or fork.

When you remove the banana from the freezer, the amylase diffused in the freezing process starts to convert the starch diffused in the freezing process into sugar, thus making the defrosted frozen banana sweeter on the tongue (via Fine Dining Lovers).

Freeze bananas for up to 3–6 months. Freezing bananas beyond 6 months may be fine, but the peeled bananas do begin to darken over time, and then they thaw into an overly mushy mess. I've found up to 6 months is fine, and under 3 months is even better.

Do bananas taste the same after being frozen? ›

Many people have concerns about the flavour and consistency of frozen bananas. While it is true that bananas will lose their firmness when thawing takes place, the flavour and nutritional value will remain the same as fresh bananas.

Why do my frozen bananas taste bitter? ›

Place the bananas in an airtight resealable plastic bag, label it with the date, and freeze 2 to 3 months. If you add banana pieces to smoothies, there's no need to let them thaw; they can go straight from your freezer to the blender.

Is it better to freeze bananas whole or sliced? ›

If you don't have a high powered blender, slicing your bananas first can be a better option than freezing them whole. You may also want to slice your bananas if you're unsure how you plan to use them, as this can make them easier to measure out for recipes.

What is the best container to freeze bananas in? ›

While we usually use glass storage containers at home, I prefer using lightweight plastic containers for this purpose, so they don't get too heavy & I don't have to worry about my kids breaking them when they reach for a frozen banana.

Whole and mashed bananas can be defrosted overnight in the fridge or at room temperature for 2-3 hours, the less time bananas are defrosting the less liquid they will release. For best results, discard any liquid before mashing and using in the recipe.

Why do frozen bananas taste good? ›

The amylase in the banana diffuse during the freezing process. When its defrosted it starts to convert the starch diffused during the freezing process into sugar, in turn it makes the defrosted frozen banana sweeter to the taste than eating fresh bananas. So the need for added sweetener in the recipes is not necessary.

Can you mash frozen bananas? ›

You can also freeze bananas whole in their peels, but this will only work if you want mashed bananas. After thawing and peeling a banana frozen in its peel, it will come out of the peel in an essentially mashed texture.
