Are you watching the FIFA World Cup? I’m not a football fan myself, but having the big game on seems to make us Brits suddenly patriotic once every four years! 😆

I’m sure by know you know my lifelong addiction and fetish affair with cherry co*ke. It’s just sooooo good. There’s not a day that goes by where you won’t find me with an ice cold glass of co*ke. It’s just one of my many quirks. I just can’t get enough!

That’s why when I found Ashton’s recipe for Cherry co*ke Jello, I almost jumped for joy. I mean, another reason to eat co*ke? Definitely something I can get on board with. *happy dance*

However, there was just one mahoosive problem, there’s no cherry flavoured jelly here in the UK! 🙁 Was that going to stop me… pfffttt!

I decided to try using unflavoured gelatine, and after one unsuccessful attempt where I added a little too much gelatine (dude, that stuff isn’t really that ‘unflavoured’), I realised I needed to add a little sugar too despite the fact that Coca-Cola is laden with it.

And wiith the football frenzy, and Coca-Cola sponsoring the big game, there’s no better excuse than to treat yourself with some awesome tasting jelly treats. They’re perfect to take to ‘the’ a more local match too.

Also, have you seen the new streamlined co*ke bottles in the shops now? They’re the same as the retro glass bottles, but in plastic form. Love!

I was impressed to see that TESCO were offering a promotional Brazil 2014 World Cup 4 pack of regular Coca-Cola, and on offer too. Only £1 per bottle? SCORREEEE!!!! (pun intended!) :p

I just had to run back to the kitchen for my second attempt at the co*ke jellies, and they were a complete success. They’re ridiculously easy to make and taste just like cherry co*ke, yet in beautiful glass-like wobbly and fun cubes. My kids absolutely adored them.

Yield: 9-inch pan

These Cherry Coca-Cola Jelly (Jello) cubes are quick, fun and are ideal for a picnic, or simply as an unexpected treat. Your kids will love these, and they can be made with any type of soda.

Prep Time10 minutes

Cook Time5 minutes

Ingredients

  • 480ml (2 cups) cherry co*ke
  • 28g (4x 7g envelopes) unflavoured gelatine
  • 4 tbsp granulated sugar
  • 1 tsp cola extract, optional
  • ½ tsp cherry extract, optional

Instructions

  1. Line a 9-inch baking pan with 2 layers of foil, leaving an 1-inch overhang (for ease of removing). Measure the coca-cola into a large jug.
  2. Put the unflavoured gelatine in a mug with the sugar and pour around ½ cup of coca-cola onto the gelatine/sugar mixture. Stir with a spoon and heat in the microwave for 30-second burst stirring after each burst until both the sugar and gelatine have completely dissolved.
  3. Pour the gelatine mixture into the jug with the coca-cola and stir. It will froth quite a bit.
  4. (Optional) Add the cola and cherry extracts and taste test to see if you’d like to add a little more. I found the mixture to taste a little bland without, oddly. I’d definitely recommend adding them.
  5. Pour into the prepared pan. Allow to cool, then transfer to the fridge to set completely.
  6. Once set, gently remove the jelly by lifting the foil overhang, gently easing with your fingers and place on a flat work surface. Use a large knife to cut into cubes.
  7. If not serving immediately, store in an airtight container in the fridge.

Notes:

You can substitute the co*ke for any flavoured soda of your choice. Or, mix it up and mix two different sodas together. Lilt (tropical) and Fanta? (Orange or Lime) 🙂
