Biscotti are iconic Italian biscuits loaded with flaked almonds and known for being twice-baked, making them quite difficult to prepare. So, is it possible to batch bake them and store them in the freezer?

Yes, you can freeze biscotti for up to 3 months. They should be stored in an airtight container to prevent them from drying out in the freezer.

How to Freeze Biscotti

If you have already baked your biscotti and want to freeze a batch of them as you know you won’t eat them all in a few weeks then this is the method to use:

  1. Cool: Before you do anything, you need to allow the biscotti time to cool as you cannot place a hot item into the freezer.
  2. Freeze on a Baking Tray: Once cooled, lay the biscotti out onto a lined baking tray ensuring none of the biscuits are toughing one another. Place the tray into the freezer for several hours.
  3. Bag Up: Once the biscotti have frozen solid, remove the tray from the freezer and tip the frozen biscotti into a labelled freezer bag.
  4. Return to the Freezer; Seal the bag up and then place the biscotti back into the freezer carefully (they can be a little brittle at this point).

How to Freeze Biscotti Dough

The good news is that you can also freeze biscotti dough. This means, in future, you can bake a batch of biscotti fresh without having to make the dough over and over again.

  1. Form Into a Log: Take your dough and carefully shape it into a log shape as if you were going to bake it. Remember you’ll need to bake the whole log so consider making multiple smaller logs.
  2. Wrap in Clingfilm: Wrap the log in a couple of sheets of clingfilm to prevent it from drying out in the freezer.
  3. Freeze on a Tray; To prevent the log from losing its shape, place the wrapped dough onto a baking tray and place the tray into the freezer, keeping it as level as possible.
  4. Bag Up: Once solid, you can optionally bag it up. This will further prevent it from getting impacted by the air in the freezer.
  5. Return to the Freezer: Return the frozen log to the freezer until you need it.

Keep Them Airtight
If the air gets to them then they’ll dry out in the freezer and the texture will be completely off. They could be even become soggy once thawed. This is why it’s vital you use good-quality freezer bags to keep them airtight.

Consider Freezing Half-Baked Biscotti
If you half baked biscotti then you can bake them from frozen almost fresh. This saves your time in future but also means you can hide the fact they were ever frozen.

Don’t Overfill the Bag
Although the biscotti will feel quite solid, they can also be brittle. If you try to cram biscotti into a back you risk snapping some in half. You’re better off splitting them between two or three bags.

How Long Can You Freeze Biscotti?

We would not recommend keeping biscotti in the freezer for longer than 3 months. The texture will already change somewhat but, beyond 3 months, this can get progressively worse.

You’ll end up with soggy biscotti if you’re not careful!

How Long Do Biscotti Last in the Fridge?

Biscotti will last in an airtight container for up to 2 weeks. If they are iced, add a layer of baking paper between each biscuit to protect the decoration.

How Do You Defrost Biscotti?

The best way to defrost biscotti is at room temperature. Take the biscotti out of the container they were stored in and place them onto a plate on your kitchen worktop. Allowing air to get to them will stop them from turning too soggy.

The texture will change, no matter what, though. To rectify this, turn your oven to 130c. Place the biscotti onto a baking tray and then place this into the oven. Turn the oven off immediately and allow them to crisp up.

Can You Refreeze Biscotti?

No, we would not advise refreezing biscotti as this can play havoc with their texture, even though it’s likely to remain safe to do so.

The only time you can refreeze biscotti is if you have frozen biscotti dough, thawed it then baked biscotti which you then want to freeze.

Do Biscotti Freeze Well?

Unfortunately, you will have some issues with biscotti when they’re frozen and thawed. This is mainly with the texture. They will lose that crispness you need when dunking them into your coffee.

This can be fixed, however, by using the method above that involves crisping them back up in a cooling oven.
