How likely are you to get botulism from canned food?
Botulism from commercially canned food is rare. It's important to never eat from cans that are bulging, dented, cracked, or leaking. Canned foods that weren't processed properly may contain deadly bacteria, but the risk of contamination is very low.
Since the canning process forces air out of food, the C. botulinum bacteria may find incorrectly or minimally processed canned foods a good place to grow and produce the toxin. Low-acid vegetables such as green beans, corn, beets, and peas, which may have picked up C. botulinum spores from the soil, are at risk.

Look at the contents for rising air bubbles and unnatural color. While opening the jar, smell for unnatural odors and look for spurting liquid and cotton-like mold growth (white, blue, black or green) on the top food surface and underside of lid.

Today, fewer than 5 of every 100 people with botulism die. Even with antitoxin and intensive medical and nursing care, some people with botulism die from respiratory failure. Others die from infections or other problems caused by being paralyzed for weeks or months.
Pressure canning is the only recommended method for canning low-acid foods. Do not use a boiling water canner for low-acid foods because it will not protect against botulism. Do not use an electric, multi-cooker appliance, even if it has a “canning” or “steam canning” button on the front panel.

Do dented cans have botulism?
The USDA says that while rare, dented cans can lead to botulism which is a deadly form of food poisoning that attacks the nervous system. Symptoms include double vision, droopy eyelids, trouble swallowing and difficulty breathing. Leaking and bulging cans can also be signs of compromised canned food.
Avoid buying any cans that are deeply dented (one that you can lay your finger into), bulging, rusting or have a dent on either the top or side seam. Deeply dented or bulging cans may be a warning sign of botulism, while cans with a sharp dent may damage the seam and allow bacteria to enter the can.
botulinum spores are often found on the surfaces of fruits and vegetables and in seafood. The organism grows best under low-oxygen conditions and produces spores and toxins. The toxin is most commonly formed when food is improperly processed (canned) at home.
