What to do when your curry is all unbalanced and needs a little TLC.
Ah, yes. You’ve just made that delicious curry according to the recipe your friend begrudgingly gave you. It’s bubbling away, every ingredient is in, and it’s time to taste.
And — urgh. It’s way too bitter. Or spicy. It’s just not right.
What happened? You followed the recipe. I mean, sure, she said ‘two or three apples, depends on the size, you know what I mean’, and you interpreted that as best you could. It was a little harder to make sense of her instructions to:
‘throw in some cumin, maybe chilli flakes, I always use two but you could use one teaspoon of curry powder, but I usually just pour it in without measuring.’
But you gave it a red-hot go. And it’s just not working.
It’s so frustrating.
