The other day I was curious to see how many points a Taco Bell Mexican Pizza would be. SEVENTEEN POINTS!!!!!

No way, totally not worth it. I knew I could easily make my own to satisfy my craving.

So that’s exactly what I did. My Mexican pizza is only 7 points. Click here to track the points on your WW app.

One thing I did to cut back on points was to use 99% fat free ground turkey instead of ground beef.

Instead of frying flour shells I bought corn tostada shells.

I also used reduced fat Mexican cheese and fat free refried beans. It was still delicious!

These Mexican Pizza’s can be topped with green onions, tomatoes, sour cream or olives. Just make sure you add any additional points if necessary.

Considering Taco Bell won’t have Mexican Pizza’s on the menu much longer, this is a great recipe to have!

Ingredients

  • 1/2lb.99% fat free ground turkey breast
  • 2teaspoonstaco seasoning
  • 1/4cupwater
  • 1cupfat free refried beans
  • 1cupreduced fat Mexican cheese, shredded
  • 1/2cupTaco Bell mild sauce (I found this in the Mexican isle at my local grocery store)
  • 8tostada shells (the ones I used were 13 points for all 8, double check your points)
  • Extras such as chopped tomatoes, green onions, sour cream, olives (calculate any additional points if necessary)

Instructions

  1. Brown the ground turkey in a frying pan. Add the taco seasoning and water and bring to a simmer. Continue to cook 3-4 minutes.

  2. Put the refried beans in a microwave safe bowl. Cook on high for 45 seconds.

  3. Take one tostada shell and spread 1/2 cup of the refried beans. Add 1/4 of the meat mixture, then top with another tostada shell.

  4. Place tostada on a baking sheet. Add 2 tablespoons of the mild sauce and 1/4 cup of the cheese.

  5. Make the other tostadas, then broil in the oven until the cheese is melted. Add any extra toppings. Enjoy!
