A magical fact about these oven pancakes, also known as ugnspannkaka is that in Sweden they come in sweet/savory form, with a layer of bacon placed at the bottom of the pan and topped with lingonberries.

The Swedish pancakes are essentially a baked custard, and are very similar to the German pancakes known in America as a Dutch baby. The Swedish version is generally baked in a square or rectangular pan and cut into square slices, while the German version is generally baked in a round skillet.

Equipment

  • 9 x 13 inch pan

Ingredients

  • 2 cups milk
  • 4 large eggs
  • 1 cup flour
  • 1/2 tsp salt
  • 1 tbsp sugar
  • 1/2 cup unsalted butter

Instructions

  • Preheat oven to 400 F.

  • Put all ingredients except the butter in a blender and blend until a smooth batter forms.

  • When the oven reaches 400 F, put butter in the bottom of a 9 x 13 inch pan and place in oven. Leave pan and butter in oven until the butter melts.

  • When the butter is melted, pour batter into the hot pan along with the melted butter.

  • Bake 30-40 minutes. The pancake will puff up while baking, then fall when removed from the oven.

  • Serve your puffed Swedish pancake with butter, maple syrup, powdered sugar, fresh fruit, whipped cream, or if you’re feeling authentically Swedish, with bacon and lingonberry jam.

  • These pancakes are best served immediately
