We love sandwiches and many times we try to put a "redneck" spin on them. Once you see how we put it together, you'll understand why we call it that.

A proper prepared reuben sandwich is comprised of corned beef, sauerkraut, russian dressing and swiss cheese. The redneck Reuben is close, but better if you ask me.

Last weekend we had smoked a small beef brisket and we took a portion of the refrigerated meat and slice it very thin with an electric knife, so it would fit nicely on the sandwich. You canuse whatever smoked meat you have on hand, evenpork shoulder (pork butt).

The Redneck Reuben

Ingredients

  • Smoked Beef Brisket
  • Sauerkraut (we like the Claussen's brand)
  • Kraft Thousand Island Dressing
  • Any kind of sliced cheese in your fridge
  • Whatever kind of bread you have on hand

Directions

Preheat Panini press to high.

Place a slice of cheese on one piece of bread (you may need two slices to cover the bread).

Add some beef brisket andspread the Kraft thousand island dressing on the meat.

Next, add the sauerkraut.The easiest way to deal with the sauerkraut is to press some of the liquid out of it with a small sieve or strainer before adding to sandwich. (hint: we heat our kraut for a minute in the microwave before pressing the liquid out).

Add more cheese and then the second slice of bread. Drop some butter onto the press and place sandwich on press, the put another small amount of butter on top of sandwich and close press to cook, check occasionally until golden brown.

NOTES

If you don't have a panini press you could toast the bread on both sides for the sandwich. You might use a tabletop grill such as a GeorgeForeman grill, instead of a Panini press. However, we haven't attempted this sandwich on one yet.

In our version we used sliced smoked provelone and Muenster cheeses that needed to be used up, and sourdough sandwich bread that we had on hand. Oh, and the pickle in the top picture is a sliced Claussen's dill pickle (yummy yummy!).
