HOW CAN I TELL IF ITS DONE?
Flesh will be pale orange and flaky on the outside with a bright orange/red opaque center.
I am looking for a slight color gradient in the thickest part of the filet. The center should be slightly translucent. Remember, the salmon will continue to cook after it's removed from the heat.
Take a look! Don't be afraid to break it open. The fillet will naturally want to crack open in the thickest part where the pin bones have been removed. Use a fork or knife to check the thickest part of the salmon. You are checking for color and flakiness.
Sockeye salmon is best served medium rare. Internal temperature should be about 110-115 in the thickest part.
Just remember, always use a timer and be conservative. You can always cook it a little bit more if needed.

As someone deeply passionate and experienced in the culinary arts, particularly in the realm of cooking techniques, I'm well-versed in various methods of preparing salmon, including grilling, pan-searing, and baking. My expertise extends from practical application to understanding the nuances of cooking temperatures, textures, and flavors that enhance the final dish.
Regarding grilling salmon, the process involves preheating the grill to a high temperature, ensuring the salmon is properly dried before brushing it with oil, seasoning it according to preference, and cooking it for a specific duration on each side. The indicator of doneness includes observing a color gradient in the thickest part of the fillet, a pale orange and flaky exterior with a slightly translucent center.
For pan-searing salmon, using a well-seasoned pan is essential. Coating the salmon with oil, achieving a good sear by cooking it for specific times on each side, and checking for a browned exterior and flakiness signify its readiness.
When it comes to baking salmon, the process involves preheating the oven, preparing the fish with oil and seasoning, and then baking it until it reaches the desired level of doneness. Different chefs recommend various baking techniques such as slow-roasting, high-heat baking, or creating unique recipes like potato chip-crusted salmon or honey broiled salmon.
Understanding the salmon's internal temperature, color, texture, and utilizing tools like a fork or knife to check for flakiness and doneness are crucial across all these methods. Furthermore, acknowledging that salmon continues to cook even after removal from heat is vital to achieving the preferred level of doneness.
To sum up, mastering the art of grilling, pan-searing, or baking salmon involves attention to detail, understanding the characteristics of the fish, and applying specific techniques recommended by renowned chefs like Chef Kevin Benner, Adam Ragusea, Maya Wilson, Barton Seaver, and Kim Sunée, among others, as referenced in the provided article on grilling techniques for salmon.
