Some types of frosting get too soft if kept too warm but otherwise it it fine. 75 should be good. |

If the cake has a custard layer or fresh fruit, I refrigerate it. I also refrigerate a cake that's iced in whipped cream or cream-cheese frosting. (Especially if I'll be serving it to people whose health may be easily compromised - little children and the elderly.) I take it out of the fridge about 30 minutes or so prior to serving. For a cake iced in buttercream, I just leave it out on the counter covered with a cake dome. | |

We had those giant Costco cupcakes for our anniversary party last year, and I'm sure something like that would be perfectly fine left out. They use regular buttercream for the frosting and filling. | |

Don't know why, but we have always put ours in the frig prior to serving just to be safe. |

That's why Costco cakes are so good! We have a freeze warning for tonight, so I'd just leave them out in the garage. But if you are talking about turning on the A/C, that may not work. Can you run them over to the church and put them in the fridge there? Otherwise, pick them up tomorrow. But call Costco and tell them your pick up date changed to tomorrow. Ours will put them in the back so they don't get picked up. I did that with DS's grad cake. Normally, I can put a cake on the bottom shelf of our fridge, but it was too full of other party food. So I called Costco and they held the cake for one more day. | |
