    (1) most of the students
      most students

      --- the word "students" is plural;
        the word "most" before that is therefore plural.

    (2) Most of the gold that has ever been mined is still around
      (from the Corpus of Contemporary American English)

      --- The word "gold" is a material noun (a mass noun).
        Gold is uncountable. We cannot count gold
        like "one gold, two golds, three golds."
        Therefore the word "gold" is called a mass noun
        (a material noun) and is therefore regarded as
        singular. Consequently, the word "most" before
        that is also regarded as singular.
