These spring rolls, sometimes called summer rolls, are a staple in Asian cuisine. Unfortunately, they sometimes contain gluten ingredients. So, we came up with a recipe that is a fantastic gluten-free option.

One thing I love about Vietnamese spring rolls is all of the sauces you can dip them in. There is peanut dipping sauce, spicy peanut sauce, gluten free soy sauce, tamari soy sauce, sweet chili sauce, and a bunch of others!

Top tip: Try a dipping sauce you’ve never tried before! It’s always fun to try new flavors. This boom boom sauce is great!

What you need

You only need a few ingredients for making your own spring rolls. It is a simple process and only takes about 10 minutes to make!

Rice Paper

Traditional spring rolls are wrapped in flour wrappers, making them not gluten-free. For a gluten-free spring roll, you will want to use either rice flour wrappers or tapioca flour wrappers. You will typically find that a rice wrapper is more common that tapioca flour wrappers.

Fresh Mint

Adding half a cup of fresh mint leaves adds a fresh flavor to these delicious spring rolls. That fresh flavor mixed with the vegetables creates such a delicious flavor.

Cooked Chicken or Cooked Shrimp

Adding chicken or shrimp to your rice paper wrappers when making fresh spring rolls is completely optional. It all depends on if you want that chicken flavor or shrimp flavor. To make gluten-free vegan spring rolls, just omit the chicken or shrimp.

How to make them

  • Fill a shallow dish with an inch of warm water
  • Place one rice paper in the water for about 20 seconds until the sheet is soft and pliable then carefully lay it flat on a plate.
  • Fill each rice paper with a few pieces of mint leaves, some carrots, cucumbers and chicken or shrimp if you are using them then fold the short sides in first followed by the long edge of one side then rolling in (similar to what you would if making a burrito) Repeat until all 8 rolls are made…

What is the difference between an egg roll and a spring roll?

Egg rolls are wrapped in a thicker wrap that has been dipped in eggs. Then they are deep fried. Egg roll wrappers are made with wheat flour. Spring rolls are wrapped in a light wrapping that is usually see-through. Both have vegetable filling. It usually just comes down to the type of wrapper.

Are these spring rolls dairy free?

Yup! Rice paper is made of rice flour, water, salt, and tapioca flour, so there are no issues on that end. Make sure you check what sauces you are dipping your spring rolls in first to ensure they are dairy free.

How to store the leftovers

You will want to wrap each spring roll in plastic wrap and then store them in an airtight container. They will last for two days in the fridge. Allow them to warm to room temperature before eating.
