With a rich history behind it, Mughlai cuisine has been the epitome of luxurious life and living like a king. This cuisine had evolved in the royal kitchen of Mughals and was brought to India during their regime. Earlier, Mughlai cuisine was known to be the community food which later came to known as luxury food. Often, it is compared with the North Indian cuisine. You might have noticed that most Mughlai dishes have Persian or Turkic names, this is because the official language of Mughals was Persian. The cooking procedure of Mughlai dishes is said to be time-consuming with heavenly taste, as most of the dishes were made in butter. Also, most of the dishes are creamier and have a nut-based gravy, and are best enjoyed with Naan and Butter Roti. Not just that, most of the dishes are prepared using spices like – cinnamon, nutmeg, cloves, saffron and green cardamom. These spices increase the flavour and are the backbone of Mughlai dishes. As Mughals were known to be fond of different types of meat, you can find a lot of meat dishes in Mughlai cuisine. Some of the common dishes that you can find in this cuisine are Murgh Musallam, Mughlai Paratha, Kadhai Gosht, Chicken Lababdar, Murgh Jehangiri, etc. Not just that, its vegetarian options are also quite delicious like Kabuli Pulao, Shahi Paneer Korma, Aloo Gobhi KI Tehari, Bharuchi Dal and Navratan Korma. Some of the other popular dishes are Mughlai Paratha, Chicken Biryani, various Kebabs, Shahi Tukda and Kalakand.
